Five Dinner Ideas:

Monday: Broccoli Cheddar Chicken

What you’ll need:

  • Meat: 4 Chicken Breasts or Tenders to feed the fam
  • Produce: 8 oz of frozen chopped broccoli
  • Canned Goods: 1 can Cheddar Cheese Soup
  • Spices: 1/2 tsp of Paprkia, 1/2 tsp of Pepper, 1/2 tsp of Salt
  • Dairy: 6 oz Cheddar Cheese, 1 Cup of Milk
  • Other: 1 1/2 Cup of Ritz
Instructions:
  1. Preheat oven to bake at 350 degrees.
  2. Grease a large size casserole dish.
  3. Season chicken with salt and pepper, then add to casserole dish.
  4. In a medium sized bowl, mix together: milk, soup, paprika, and cheddar cheese.
  5. Pour half of mixture over chicken.
  6. Scatter broccoli pieces over chicken and cheese mixture.
  7. Top with Ritz cracker pieces and remaining cheese mixture.
  8. Place in oven for 45 minutes.

 

Tuesday: Cheesy Taco Sticks

What you’ll need:

  • Meat: 1 lb Ground beef
  • Produce:
  • Baking & Spices: 1 tube Pillsbury pizza dough or rolls, 1 packet Taco seasoning mix, 1 tsp Garlic powder, 1 tsp Parsley
  • Dairy: 4 tbsp Butter, 5 Colby jack and cheddar cheese sticks

Instructions:

  1. Preheat oven to 425 degrees F.
  2. Lightly coat a large baking sheet with non-stick spray and set aside.
  3. Cook the ground beef in a skillet, breaking up with a wooden spoon until fully browned and crumbled. Drain any fat and return skillet to stove top. Mix in the taco seasoning packet and stir until fully coated. Remove from heat and let cool to room temperature.
  4. Spread the pizza dough out until it's flat and cut in half lengthwise and then 4 cuts up and down, creating a total of 10 small rectangles. Place about a tablespoon or more of the taco meat in the center of each pizza dough, top with a halved cheese stick and then carefully roll up the pizza stick, making sure to pinch all seams closed.
  5. Combine the melted butter, garlic powder and parsley in a small bowl and brush it on the tops of the cheesy taco sticks.
  6. Bake for 10 to 12 minutes or until golden brown on top.
  7. Serve hot with your favorite taco toppings, salsa, and/or sour cream!

 

Wednesday: Garlic Butter Shrimp Scampi

What you’ll need:

  • Seafood: 1 package McCormick garlic butter shrimp scampi seasoning mix, 1 lb Shrimp - large, peeled, deveined
  • Pasta & Grains: 8 oz Linguine or other pasta
  • Oils & Vinegars: 1/4 cup Olive oil
  • Dairy: 1/4 cup Butter
  • Juice: 1 tbsp Lemon juice or 2 tbs white wine

Instructions:

  1. Cook pasta as directed on package. Drain well.
  2. Meanwhile, heat oil and butter in large skillet on medium heat until butter is melted.
  3. Add shrimp and Seasoning Mix.
  4. Cook and stir 3 to 4 minutes or just until shrimp turn pink.
  5. Stir in lemon juice or wine, if desired.
  6. Then, toss with cooked pasta to coat well.
  7. Serve with grated Parmesan cheese, if desired.

 

Thursday: Beef Tips & Rice

What you’ll need:

  • Meat: 2 lbs cubed beef stew meat
  • Sauce & Seasoning: 3 tablespoons vegetable oil (or canola), 3 cups water, 1/4 cup soy sauce, 1/4 cup Worcestershire sauce, 1 teaspoon garlic powder, 1 teaspoon salt, 1 teaspoon fresh ground pepper, 1 package brown gravy mix,
  • Vegetables: 1 onion, chopped

Instructions:

  1. In a large skillet over medium-high to high heat, heat 3 tablespoons of oil.
  2. Add the chopped onion and cook until they are translucent, stirring occasionally.
  3. Next, add cubed beef to the oil and onions, browning the meat on all sides – it will take about a minute on each side.
  4. After browning the beef, add 2 cups of water, Worcestershire sauce and soy sauce.
  5. Next add garlic powder, salt and pepper, stir well.
  6. Bring to a boil then reduce heat, COVER and simmer for 1 1/2 hours.
  7. Last, in a medium size bowl, add the gravy mix and 1 cup water, mix well then pour over beef – stir until well blended.
  8. Increase heat, bringing to a boil while continuously stirring –  it is ready when the sauce slightly thickens.
  9. Serve over mashed potatoes, white rice or egg noodles with your favorite steamed vegetable and salad.

 

Friday: Breakfast

What you’ll need:

  • Meat: 1 pack of Bacon
  • Packaged: Quick Grits
  • Dairy: Butter, Milk
  • Seasoning: 1 tbsp of salt, 1 tbsp of pepper
  • Any other breakfast item!

Instructions:

  1. Preheat oven to 400.
  2. Prepare a baking sheet with aluminum foil and grease with olive oil or other choice of spray.
  3. Lay bacon flat on baking sheet and place into oven for 10-15 minutes, depending on how cooked you would like your bacon to be.
  4. Remove bacon when it gets to desired temperature and cooked level.

Grits:

  1. Grease small cooking pan and turn medium heat.
  2. Add water per the directions on grits package.
  3. For more thick country grits, substitute some of the water for milk and butter.
  4. Turn to high heat and bring to a boil.
  5. Add desired grits per package instructions.
  6. Turn to medium to low heat.
  7. Let simmer and stir occasionally until thick.
  8. Add cheese, butter, salt, and pepper.
